Method

Preparation of Vegetables

  1. 1

    Prepare the Cherry Tomatoes

Wash the cherry tomatoes under cold water. Cut them in halves and set aside in a large mixing bowl.

  2. 2

    Prepare the Cucumber

Peel the cucumber if desired. Cut it in half lengthwise, scoop out the seeds with a spoon, and then chop it into bite-sized pieces. Add to the mixing bowl.

  3. 3

    Prepare the Bell Pepper

Remove the seeds and stem from the bell pepper. Dice it into small pieces and add to the mixing bowl.

  4. 4

    Prepare the Red Onion

Peel and thinly slice the red onion. If you prefer a milder flavor, soak the slices in cold water for 10 minutes, then drain. Add to the mixing bowl.

  5. 5

    Prepare the Olives

Rinse the Kalamata olives under cold water. If desired, slice them in halves and add to the mixing bowl.

  6. 6

    Add the Greens

Add the arugula or mixed greens to the mixing bowl with the other vegetables.

Adding Cheeses and Proteins

  1. 7

    Add the Mozzarella

Drain any liquid from the mozzarella balls and add them whole to the mixing bowl.

  2. 8

    Add the Salami

Cut the salami slices into strips or quarters and add to the mixing bowl.

  3. 9

    Add the Prosciutto

Tear the prosciutto slices into smaller pieces and add to the mixing bowl.

Preparing the Dressing

  1. 10

    Mix the Dressing Ingredients

In a small mixing bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.

Bringing It All Together

  1. 11

    Combine the Salad

Pour the dressing over the salad ingredients in the mixing bowl. Gently toss everything together until the salad is well coated with the dressing.
