Cannoli Shells

    Prepare the Dough

    In a mixing bowl, combine the flour, sugar, salt, and butter. Mix well until the mixture resembles coarse crumbs.

    Incorporate Wet Ingredients

    Add the egg yolks and white wine to the dry ingredients. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll Out the Dough

    After resting, roll out the dough to about 1/8 inch thickness and cut into circles (about 4 inches in diameter).

    Fry the Shells

    Heat vegetable oil in a deep frying pan. Wrap each dough circle around a cannoli tube and fry until golden brown. Remove and let cool.

Cannoli Filling

    Make the Filling

    In a bowl, mix together the ricotta cheese, powdered sugar, vanilla extract, and ground cinnamon until smooth.

    Add Chocolate Chips

    Fold in the chocolate chips into the ricotta mixture until evenly distributed.

    Fill the Shells

    Once the shells are completely cooled, use a piping bag to fill them with the ricotta mixture.

Garnish

    Dust the filled cannoli with powdered sugar and sprinkle additional chocolate chips on top as desired.
