Calamari Preparation

Prepare the Squid
Rinse the cleaned squid under cold water and pat dry with paper towels. Cut the squid into rings if not already done.

Mix the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Coat the Squid
Dip the squid rings into the egg mixture, allowing excess to drip off, then dredge them in the flour mixture until well coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Fry the squid rings in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Add the crushed tomatoes, dried oregano, salt, black pepper, and red pepper flakes (if using) to the saucepan. Stir to combine.

Simmer the Sauce
Lower the heat and let the sauce simmer for about 15-20 minutes, stirring occasionally until slightly thickened.

Garnish the Sauce
Remove from heat and stir in the chopped fresh basil.
