    Caramelize the Onions

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized. Remove from the skillet and set aside.

    Sear the Scallops

    In the same skillet, add 2 tablespoons of butter over medium-high heat. Once melted, add the scallops in a single layer. Sear for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops and set aside.

    Cook the Shrimp

    In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the shrimp and season with salt and black pepper. Cook for about 3-4 minutes, or until the shrimp turn pink and opaque. Stir in the lemon juice and cook for an additional minute.

    Add Wine and Pesto

    Pour in the Pinot Grigio wine and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Stir in the pesto sauce and mix well, allowing the sauce to heat through.

    Combine Ingredients

    Return the caramelized onions and seared scallops to the skillet, stirring gently to combine all ingredients. Cook for an additional 2-3 minutes to heat everything through and meld the flavors.

    Serve

    Serve the shrimp and scallop mixture hot, garnished with fresh basil or parsley if desired. Enjoy!
