    Prepare the Potatoes

    Start by washing the russet potatoes thoroughly. Place them in a large pot and cover with cold water. Bring to a boil and cook until the potatoes are fork-tender, about 30-40 minutes.

    Once the potatoes are cooked, drain them and let them cool for a few minutes until you can handle them. Peel the skins off while they are still warm.

    Mash the Potatoes

    Using a potato ricer or a masher, mash the potatoes until smooth. Allow the mashed potatoes to cool completely.

    In a large bowl, combine the cooled mashed potatoes, all-purpose flour, egg, salt, and nutmeg. Mix until a soft dough forms. Avoid overworking the dough to keep the gnocchi light and fluffy.
