In a large bowl, combine the cooled mashed potatoes, all-purpose flour, egg, salt, and nutmeg. Mix until a soft dough forms. Avoid overworking the dough to keep the gnocchi light and fluffy.

Divide the dough into four equal sections. Roll each section into a long rope about 1/2 inch thick. Cut the ropes into 1-inch pieces. Optionally, you can press each piece with a fork to create ridges.
