Chicken Marsala

Prepare Chicken
Season the chicken breasts with salt and black pepper on both sides. Dredge each piece in flour, shaking off any excess.

Cook Chicken
In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.

Add Liquids
Pour in the Marsala wine and chicken broth. Bring to a boil, scraping up any browned bits from the bottom of the skillet. Let it simmer for about 5 minutes.

Prepare Potatoes
Preheat the oven to 425°F (220°C). In a bowl, toss halved baby potatoes with olive oil, garlic powder, dried rosemary, salt, and black pepper.

Roast Potatoes
Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes, or until golden and crispy, flipping halfway through.
