In a large bowl, combine shredded cabbage, caraway seeds, and salt. Massage the mixture until the cabbage releases its juices. Pack into a clean jar, add water to cover, and let sit at room temperature for 1-2 weeks to ferment.

Assemble the Dish
Top each pancake with a generous portion of sauerkraut and shredded Swiss cheese. Place under a broiler for 1-2 minutes until cheese is melted.
