Preparation of Sauerkraut

    Make the Sauerkraut

    In a large bowl, combine shredded cabbage, caraway seeds, and salt. Massage the mixture until the cabbage releases its juices. Pack into a clean jar, add water to cover, and let sit at room temperature for 1-2 weeks to ferment.

    Prepare the Potato Mixture

    Peel and grate the russet potatoes. In a bowl, combine grated potatoes, grated carrot, chopped onion, flour, beaten eggs, salt, and pepper.

    Cook the Pancakes

    Heat vegetable oil in a skillet over medium heat. Scoop 1/4 cup of the potato mixture into the skillet and flatten slightly. Cook for 3-4 minutes on each side or until golden brown. Repeat with remaining mixture.

    Top each pancake with a generous portion of sauerkraut and shredded Swiss cheese. Place under a broiler for 1-2 minutes until cheese is melted.
