Prepare the Potatoes

Peel and grate the russet potatoes and onion using a box grater or food processor. Place the grated potatoes and onion in a clean kitchen towel, twist the towel, and squeeze out as much moisture as possible.

Mix the Batter

In a large mixing bowl, combine the grated potatoes and onion with the eggs, flour, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Heat the Oil

In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat until shimmering.

Fry the Latkes

Using a spoon or your hands, form small patties (about 1/4 cup each) and carefully place them into the hot oil. Fry for 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan; work in batches if necessary.
