Method

Prepare the Dough

    Make the Pierogi Dough

    In a large bowl, mix the flour and salt. In a separate bowl, whisk the egg and water together. Gradually add the wet ingredients to the flour mixture until a dough forms. Knead for about 5 minutes until smooth. Cover and let rest for 30 minutes.

Make the Fillings

    Prepare Cheese Filling

    In a bowl, mix ricotta, cheddar, salt, and pepper until well combined.

    Prepare Potato Filling

    Boil potatoes until tender, then drain. In a skillet, melt butter and sauté onions until translucent. Mash potatoes and mix with sautéed onions, salt, and pepper.

    Prepare Stuffed Cabbage Filling

    In a bowl, combine cooked rice, sauerkraut, chopped mushrooms, onion, salt, and pepper.

Assemble and Cook Pierogi

    Form the Pierogi

    Roll out the dough on a floured surface. Cut out circles using a cookie cutter or glass. Place a spoonful of cheese filling on one half of each circle, fold over, and pinch to seal. Repeat with potato filling.

    Cook the Pierogi

    Bring a large pot of salted water to a boil. Cook pierogi in batches for about 3-4 minutes or until they float. Remove and drain.

Prepare Stuffed Cabbage

    Roll the Cabbage

    Blanch cabbage leaves in boiling water until soft. Place a spoonful of the rice mixture in each leaf, fold in the sides, and roll up tightly.

    Cook Stuffed Cabbage

    Place stuffed cabbage in a baking dish. Cover with foil and bake at 350°F (175°C) for 30 minutes.

Make the Mushroom Gravy

    Prepare Gravy

    In a skillet, melt butter and sauté onions and sliced mushrooms until soft. Stir in flour and cook for 1 minute. Gradually add vegetable broth, stirring until thickened. Season with salt and pepper.

Serve

    Plate the Dish

    Serve pierogi and stuffed cabbage with mushroom gravy drizzled on top and a side of sour cream.
