Borscht Preparation

Cook the Vegetables
In a large pot, combine beets, cabbage, carrots, potatoes, and onion. Add the vegetable broth and bring to a boil. Reduce heat and simmer for 30 minutes.

Add Garlic and Seasoning
Stir in minced garlic, tomato paste, dill, salt, and pepper. Simmer for an additional 15 minutes.

Serve
Ladle the borscht into bowls and top with a dollop of sour cream.

Form the Dumplings
Roll out the dough and cut it into circles. Place a spoonful of filling in each circle and fold over, sealing the edges.

Cook the Dumplings
Boil the varenyky in salted water until they float. Drain and serve hot.
Holodets Preparation

Simmer
Reduce heat and simmer for 4-6 hours until meat is tender and broth is flavorful.

Cool and Set
Strain the broth, discarding solids. Pour the liquid into molds and refrigerate until set.
Salad Preparation

Combine Vegetables
In a large bowl, mix cucumbers, tomatoes, red onion, and bell pepper.

Drizzle with olive oil and vinegar. Season with salt and pepper, and toss to combine.
