    Prepare the Meat

    In a large pot, add the beef (or pork) and cover with water. Bring to a boil, then reduce heat and simmer for about 1 hour. Skim off any foam that rises to the surface.

    Chop the Vegetables

    While the meat is cooking, peel and chop the beetroot, potatoes, carrots, onion, and cabbage. Mince the garlic.

    Add Vegetables

    After the meat has simmered for an hour, add the chopped vegetables (beetroot, potatoes, carrots, onion, and cabbage) to the pot.

    Season the Soup

    Stir in the tomato paste, bay leaves, black pepper, and salt. Continue to simmer for another 30-40 minutes until the vegetables are tender.

    Final Touches

    Add minced garlic and adjust seasoning with salt and dill to taste. Simmer for an additional 5 minutes.

    Ladle the borscht into bowls, and top with a dollop of sour cream and a sprinkle of fresh parsley before serving.
