Method

Dough Preparation

    Mix the Dough

    In a large bowl, combine flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Potato Filling Preparation

    Cook the Potatoes

    Boil potatoes until tender, about 15-20 minutes. Drain and mash with butter, salt, and black pepper.

Kasha Filling Preparation

    Prepare the Kasha

    In a saucepan, bring water to a boil. Add buckwheat groats and cook until tender, about 15 minutes. In a separate pan, sauté chopped onion in butter until translucent. Combine with kasha.

Sauerkraut & Mushroom Filling Preparation

    Cook Sauerkraut and Mushrooms

    In a skillet, sauté chopped onion in butter until soft. Add mushrooms and cook until browned. Stir in sauerkraut and heat through.

Assembly and Cooking

    Assemble the Varenyky

    Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles. Place a spoonful of each filling in the center of the dough circles. Fold and seal tightly.

    Cook the Varenyky

    Bring a large pot of salted water to a boil. Drop in the varenyky in batches and cook until they float to the surface, about 5-7 minutes. Remove with a slotted spoon.

    Serve

    Serve warm, topped with additional butter, sour cream, or fried onions if desired.
