Method
Pierogi

Make the Dough
In a large bowl, combine flour and salt. Make a well in the center and add eggs and water. Mix until a dough forms. Knead for 10 minutes.

Prepare the Filling
Mash the potatoes and mix with cheddar cheese. Season with salt and pepper to taste.

Shape the Pierogi
Roll out the dough and cut into circles. Place a spoonful of filling in the center, fold, and seal the edges.

Cook the Pierogi
Boil in salted water until they float. Remove and fry in butter until golden brown.

Sear the Beef
In a large pot, sear the beef chuck until browned on all sides.

Simmer
Add beef broth, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours.

Pour in vegetable broth, add salt and pepper, and bring to a boil. Reduce heat and simmer for 30 minutes.

Let it Rise
Let the dough rise for 1 hour in a warm place.
