Preparation of Cabbage
1. Prepare the Cabbage
Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and place the whole head in boiling water for about 5-7 minutes until the leaves are tender. Remove and let cool. Carefully peel off the leaves.

For meatless: In a skillet, heat olive oil over medium heat. Sauté onions and garlic until translucent. Add mushrooms, cook until soft. Mix with rice, sauerkraut, salt, pepper, and dill. For meat: In a skillet, sauté onions and garlic, then mix with ground pork and rice, adding salt, pepper, and paprika.
Assembly
3. Stuff the Cabbage
Place about 2-3 tablespoons of filling in each cabbage leaf. Roll tightly, tucking in the sides. Repeat until all filling is used.
Cooking
4. Cook the Cabbage Rolls
Preheat the oven to 350°F (175°C). In a large baking dish, lay some cabbage leaves on the bottom. Place stuffed cabbage rolls seam-side down. Pour mushroom gravy or tomato sauce over the rolls and cover with foil. Bake for 1 hour.
Serving
5. Serve
Remove from oven and let cool slightly. Serve warm with your choice of side dish.
