Make the Dough
In a large bowl, combine flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms, then knead on a floured surface until smooth. Cover and let rest for 30 minutes.

Form the Pierogi
On a floured surface, roll out the dough to about 1/8 inch thick. Cut into circles using a cookie cutter. Place a spoonful of filling in the center of each circle, fold over, and pinch the edges to seal.

Serve the pierogi topped with sautéed onions and a dollop of sour cream, garnished with fresh parsley.
