Crepe Preparation

Make the Crepe Batter
In a mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs, then add the milk and water. Gradually mix the wet ingredients into the dry ingredients until smooth. Let the batter rest for 30 minutes.

Cook the Crepes
Heat a non-stick skillet over medium heat and melt a little butter. Pour a ladleful of batter and swirl to coat the pan. Cook until the edges start to lift, then flip and cook for another minute. Repeat with remaining batter.

Assemble the Blintzes
Place a crepe on a flat surface, add a spoonful of the cheese filling to the center, then fold the sides over and roll it up tightly.

Raspberry Sauce Preparation

Make the Raspberry Sauce
In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the sauce thickens slightly, about 10 minutes. Strain if desired.
