    Remove the outer leaves of the cabbage, then cut it into quarters and remove the core. Shred the cabbage into thin strips using a knife or a mandoline.

    In a large mixing bowl, combine the shredded cabbage with the kosher salt. Massage the salt into the cabbage for about 5-10 minutes until it begins to release its juices.

    Add Caraway Seeds

    Stir in the caraway seeds evenly throughout the salted cabbage mixture.

    Pack into a Jar

    Transfer the cabbage mixture into a clean glass jar or fermentation crock, packing it down tightly to remove air bubbles. Leave about 1-2 inches of headspace at the top.

    If there is not enough liquid to cover the cabbage, add filtered water until the cabbage is fully submerged.
