Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Wet Ingredients
In another bowl, whisk together the eggs, sour cream, vegetable oil, vanilla extract, and dark rum until smooth.

Combine Mixtures
Slowly add the wet mixture to the dry ingredients, stirring until just combined. Fold in the cherries and walnuts.

Bake the Cake
Divide the batter evenly between the prepared pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Frosting Preparation

Prepare the Frosting
In a medium bowl, whip the heavy cream until soft peaks form. Gently fold in the dulce de leche until well combined.

Once the cakes are completely cool, spread the dulce de leche frosting evenly between the layers and on top of the cake.
