Potato Pancakes

Prepare the potatoes
Peel and grate the potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out excess moisture.

Mix the batter
In a large bowl, combine the grated potatoes, onion, flour, eggs, salt, and pepper. Mix until well combined.

Make the sauce
Sprinkle flour over the mushrooms and onions, stirring to coat. Slowly add beef broth, stirring until thickened. Return beef to the skillet, mix in sour cream, and season with salt and pepper.
Chicken Paprikash

Cook the chicken
In a large skillet, heat olive oil over medium heat. Add chicken thighs and brown on both sides. Remove and set aside.

Make the sauce
Add chicken broth, return chicken to the skillet, and cover. Simmer until chicken is cooked through. Stir in sour cream and season with salt and pepper.
Soup

Prepare the soup
In a pot, bring vegetable broth to a boil. Add chopped carrots, celery, potatoes, and onion. Reduce heat and simmer until vegetables are tender.

Season the soup
Season with salt and pepper to taste. Serve hot as a side option.
