Beef Stroganoff

Chicken Paprikash

Soup (choice of)

Method

Potato Pancakes

  1. 1

    Prepare the potatoes

Peel and grate the potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out excess moisture.

  2. 2

    Mix the batter

In a large bowl, combine the grated potatoes, onion, flour, eggs, salt, and pepper. Mix until well combined.

  3. 3

    Cook the pancakes

Heat vegetable oil in a skillet over medium-high heat. Spoon the potato mixture into the skillet, flattening it slightly. Cook until golden brown, about 3-4 minutes per side. Drain on paper towels.

Beef Stroganoff

  1. 4

    Cook the beef

In a skillet, heat olive oil over medium heat. Add sliced beef and cook until browned. Remove beef and set aside.

  2. 5

    Sauté mushrooms and onions

In the same skillet, add more olive oil if necessary. Add sliced mushrooms and chopped onions, cooking until soft.

  3. 6

    Make the sauce

Sprinkle flour over the mushrooms and onions, stirring to coat. Slowly add beef broth, stirring until thickened. Return beef to the skillet, mix in sour cream, and season with salt and pepper.

Chicken Paprikash

  1. 7

    Cook the chicken

In a large skillet, heat olive oil over medium heat. Add chicken thighs and brown on both sides. Remove and set aside.

  2. 8

    Sauté onions and add paprika

In the same skillet, add chopped onion and sauté until soft. Stir in paprika and cook for another minute.

  3. 9

    Make the sauce

Add chicken broth, return chicken to the skillet, and cover. Simmer until chicken is cooked through. Stir in sour cream and season with salt and pepper.

Soup

  1. 10

    Prepare the soup

In a pot, bring vegetable broth to a boil. Add chopped carrots, celery, potatoes, and onion. Reduce heat and simmer until vegetables are tender.

  2. 11

    Season the soup

Season with salt and pepper to taste. Serve hot as a side option.
