Make the Dough
In a large bowl, mix flour and salt. Make a well in the center and add eggs and water. Mix until a dough forms. Knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Assemble the Pierogi
Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into circles using a glass or cookie cutter. Place a spoonful of filling in the center of each circle, fold over, and pinch edges to seal.

Cook the Pierogi
Bring a large pot of salted water to a boil. Drop pierogi in batches and cook for 3-5 minutes until they float. Remove with a slotted spoon and set aside.

Serve
Serve warm with sour cream on the side.
