Pierogi Preparation

    Make the Dough

    In a large bowl, mix flour and salt. Create a well in the center and add the egg and sour cream. Gradually mix in the flour until a dough forms. Knead the dough for about 5-10 minutes until smooth, then let it rest for 30 minutes.

    Prepare the Filling

    Boil the potatoes until tender, then mash them. If using onion, sauté in butter until golden and mix with the potatoes. Season to taste.

    Form the Pierogi

    Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles using a glass or cutter. Place a spoonful of filling in the center of each circle, fold over, and seal the edges with a fork.

    Cook the Pierogi

    Boil a large pot of salted water. Drop the pierogi in batches and cook until they float to the surface, about 3-5 minutes. Optionally, sauté in butter after boiling for a crispy finish.

Soup Preparation

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until softened, about 5-7 minutes.

    Add Broth and Potatoes

    Add vegetable broth and diced potatoes to the pot. Bring to a boil, then reduce heat to a simmer. Season with salt, pepper, and herbs to taste.

    Simmer

    Let the soup simmer for about 20-30 minutes until all vegetables are tender.
