    Make the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and water. Mix until a dough forms, then knead for about 5 minutes until smooth. Cover and let rest for 30 minutes.

    Prepare Fillings

    Boil potatoes until tender, then mash. In a skillet, sauté onions in butter until golden, then mix with potatoes and cheese. For sauerkraut pierogi, mix sauerkraut with sautéed mushrooms and onions.

    Roll and Fill

    Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles, fill with your choice of filling, and fold over, sealing edges with a fork.

Meat Stuffed Cabbage Preparation

    Prepare Cabbage

    Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the head in boiling water for about 5 minutes until leaves are pliable. Remove and cool slightly.

    Make the Filling

    In a bowl, combine ground meat, cooked rice, chopped onion, garlic, salt, pepper, and dill. Mix well.

    Assemble Holubtsi

    Take a cabbage leaf, place a spoonful of the meat mixture at the base, roll tightly, and tuck in the sides. Place in a baking dish. Repeat until all filling is used.

    Bake

    Pour tomato sauce over the stuffed cabbage. Cover with foil and bake at 350°F (175°C) for 1 hour. Remove foil and bake for an additional 15 minutes.
