Chicken Noodle Soup

Matzoh Ball Soup

Method

Chicken Noodle Soup

    Prepare the Vegetables

    In a large pot, heat olive oil over medium heat. Add carrots and celery, sauté until softened.

    Combine Ingredients

    Add chicken broth, shredded chicken, and egg noodles. Bring to a boil, then reduce heat and simmer for 15 minutes.

    Season and Serve

    Season with salt, black pepper, and fresh parsley. Serve hot.

Matzoh Ball Soup

    Make Matzoh Balls

    In a bowl, mix matzoh meal, eggs, water, and salt. Refrigerate for 30 minutes.

    Cook Matzoh Balls

    Bring chicken broth to a boil. Form the matzoh mixture into balls and drop into the boiling broth. Cook for 20 minutes.

    Add chopped carrots and celery, simmer for an additional 10 minutes. Garnish with dill and serve.

Vegetarian Borscht

    In a large pot, combine beets, carrots, potatoes, and cabbage with vegetable broth. Bring to a boil.

    Reduce heat and simmer for 30 minutes. Season with salt, black pepper, and add lemon juice.

Ukrainian Meat Borscht
