    Prepare the Kasha

    In a medium saucepan, bring water to a boil. Add kasha and salt, reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let cool.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent. Add chopped mushrooms and cook until softened. Stir in cooked kasha and parsley. Season with black pepper, mix well.

    Stuff the Cabbage

    Carefully remove cabbage leaves and lay them flat. Place a generous spoonful of the kasha mixture at the base of each leaf. Roll the sides over the filling and then roll up tightly from the base to secure.

    Prepare for Baking

    Preheat the oven to 350°F (175°C). Spread some leftover cabbage leaves or a thin layer of sauce at the bottom of a baking dish. Arrange stuffed cabbage seam-side down in the dish.

    Bake

    Cover the baking dish with aluminum foil and bake for 30-40 minutes. Remove foil for the last 10 minutes to allow tops to brown slightly.
