Prepare the Ingredients
Gather all the ingredients. If using bacon, preheat a skillet over medium heat.

Cook the Bacon or Kielbasa
Add the bacon or kielbasa to the skillet and cook until crispy, about 5-7 minutes. Remove and let drain on paper towels.

Assemble the Rolls
Slice the challah knots in half. Place a slice of cheese on the bottom half of each roll. Add the cooked bacon or kielbasa, followed by the fried egg. Top with the other half of the roll.

Serve the fried egg rolls with a cup of coffee or tea on the side.
