Method

Borscht Preparation

    Cook the Vegetables

    In a large pot, add the vegetable broth, beets, cabbage, carrots, onion, and garlic. Bring to a boil, then reduce heat and simmer for about 30 minutes or until vegetables are tender.

    Add Flavorings

    Stir in tomato paste, bay leaves, salt, and pepper. Simmer for another 10 minutes.

    Serve

    Remove bay leaves, serve hot with dill and a dollop of sour cream.

Varenyky Preparation

    Make the Dough

    In a bowl, mix flour and salt. Create a well in the center, add the egg, and gradually mix in water until a dough forms. Knead for 5-10 minutes until smooth.

    Prepare the Filling

    Boil potatoes until tender, mash them, and mix with butter and salt.

    Form the Dumplings

    Roll out the dough and cut circles, place a spoonful of filling in the center, fold and seal the edges.

    Cook the Dumplings

    Boil the dumplings in salted water until they float. Serve with butter.

Holodets Preparation

    Prepare the Meat

    In a large pot, combine pork, beef bones, carrots, onion, garlic, and water. Bring to a boil, then reduce heat and simmer for 2-3 hours until meat is tender.

    Strain and Cool

    Remove meat and vegetables, strain the broth, and let it cool. Once cooled, skim off any fat.

    Add Gelatin and Set

    Dissolve gelatin in a small amount of warm water, add to the broth, and pour into molds. Refrigerate until set.

    Serve

    Cut into slices and serve cold.
