    Preheat and Prep

    Preheat your oven to 325°F (165°C). Season the short ribs with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them until browned on all sides, about 3-4 minutes per side. Remove from pot and set aside.

    In the same pot, add onions, carrots, and celery. Sauté until softened, about 5-7 minutes. Stir in garlic and cook for an additional minute.

    Deglaze the Pot

    Pour in red wine, scraping up any browned bits from the bottom of the pot. Allow to simmer for about 2 minutes.

    Return the short ribs to the pot, add beef broth, bay leaves, and thyme. Bring to a gentle simmer.
