Prepare Chicken Schnitzel

Pound the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/4 inch using a meat mallet.

Season and Bread
Season the chicken with salt and pepper. Dredge each piece in flour, dip in beaten eggs, then coat in panko breadcrumbs.

Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken schnitzels for about 3-4 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Make the Gravy
Sprinkle flour over the mushrooms and stir well. Gradually add chicken broth, stirring constantly until the mixture thickens. Season with salt, pepper, and thyme.

Combine Salad Ingredients
In a bowl, combine cooked beets, arugula, and feta cheese. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper to taste.
