Dough Preparation

    Make the Dough

    In a large bowl, combine the flour and salt. Add the egg and water, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a cloth and let it rest for 30 minutes.

    Prepare the Filling

    Boil the potatoes until tender. Drain and mash them in a bowl. In a skillet, sauté the chopped onion in a little oil until golden brown. Combine the mashed potatoes, ricotta cheese, sautéed onion, salt, and pepper in a bowl. Mix well.

    Assemble the Pierogi

    Roll out the dough on a floured surface to about 1/8 inch thick. Cut out circles using a glass or cookie cutter. Place a small spoonful of filling in the center of each circle. Fold over and pinch the edges to seal tightly.

Cooking

    Cook the Pierogi

    Bring a large pot of salted water to a boil. Drop in the pierogi and cook for 3-5 minutes until they float to the surface. For a fried option, heat butter in a skillet and fry the boiled pierogi until golden brown.

    Serve

    In a skillet, sauté sliced onions in butter until they are caramelized. Serve the pierogi topped with the sautéed onions and a side of sour cream.
