Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are soft and fragrant.

Cook the Chicken
Add the chicken pieces to the skillet, season with salt and pepper, and cook until browned on all sides.

Add Paprika and Peppers
Stir in the paprika and sliced red bell peppers, mixing well to coat everything in the spices.

Add Chicken Broth
Pour in the chicken broth, bring to a simmer, and cover. Let it cook for about 20 minutes, or until the chicken is fully cooked and tender.

Finish the Sauce
Reduce the heat, stir in the sour cream, and let the sauce thicken for a few minutes. Adjust seasoning if necessary.

Cook the Egg Noodles
Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.

Serve the chicken paprikash over the egg noodles, garnished with fresh parsley.
