Method

Crust Preparation

  1. 1

    Make the Crust

Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

  2. 2

    Bake the Crust

Bake the crust in the preheated oven for about 10 minutes until lightly golden. Remove from oven and allow to cool.

Filling Preparation

  1. 3

    Prepare the Filling

In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add in the sugar and mix until combined. Then, add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until the batter is smooth.

  2. 4

    Pour Filling

Pour the cream cheese mixture over the cooled crust in the springform pan.

Baking

  1. 5

    Bake the Cheesecake

Bake in the oven at 325°F (163°C) for about 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake in the oven with the door slightly ajar for 1 hour.

  2. 6

    Cool and Chill

Remove the cheesecake from the oven and let it cool at room temperature for about 1 hour. Then refrigerate for at least 4 hours or overnight before serving.

Serving

  1. 7

    Garnish and Serve

Before serving, top the cheesecake with fresh berries and a dollop of whipped cream if desired. Slice and enjoy!
