Prepare the Dough

    Make the Dough

    In a large bowl, mix together the flour and salt. Create a well in the center, add the egg and half a cup of water. Mix until a dough forms, then knead on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling

    Make the Blueberry Filling

    In a small saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook for about 5-7 minutes until the blueberries have softened and released their juices. Remove from heat and let it cool slightly.

Assemble the Pierogi

    Fill the Pierogi

    Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles using a cookie cutter or glass. Place a small spoonful of the blueberry filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing them together, ensuring there are no air pockets.

Fry the Pierogi

    Fry the Pierogi

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the pierogi in batches, frying for about 3-4 minutes on each side until golden brown. Remove and place on a paper towel to drain excess oil.

Serve

    Assemble the Dessert Bowl

    To serve, place three fried blueberry pierogi in a bowl, add a scoop of vanilla ice cream on top, and garnish with fresh blueberries and mint leaves.
