    Prepare the Meat

    Take the Texas, Australian, and Japanese Wagyu tenderloin portions out of the refrigerator and let them sit at room temperature for about 30 minutes.

    Season the Meat

    Season each piece of Wagyu with salt and black pepper to taste.

    Heat the Pan

    In a heavy skillet, heat the olive oil over high heat until it's shimmering but not smoking.

    Sear the Wagyu

    Carefully add each piece of Wagyu to the skillet. Sear each side for about 1 minute, keeping the center rare (black & blue).

    Rest the Meat

    Remove the Wagyu from the skillet and let it rest for about 5 minutes before slicing.

    Serve

    Slice the Wagyu portions and arrange them on a plate. Serve immediately.
