Stuffed Quail
Stuff the Quail
Preheat the oven to 375°F (190°C). Stuff the quail with the sausage mixture. Place stuffed quail in a roasting pan and roast for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
Blackberry Brandy Demi-Glace
Make the Demi-Glace
In a saucepan, combine blackberry brandy and beef stock. Bring to a boil, then reduce heat and let simmer until reduced by half. Mix cornstarch with a little water to make a slurry, then add to the sauce to thicken. Stir in fresh blackberries and simmer for additional 5 minutes.
Mushroom Risotto
Cook the Risotto
In a saucepan, heat vegetable stock until simmering. In another pan, melt butter and sauté onion and sliced mushrooms until soft. Add Arborio rice and stir for 1-2 minutes. Gradually add warm vegetable stock, stirring constantly until rice is al dente. Stir in Parmesan cheese, salt, and pepper.
