    Prepare the Garlic

    Preheat the oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized (about 15-20 minutes). Remove from skillet and set aside.

    Sauté the Mushrooms

    In the same skillet, add another tablespoon of olive oil and sauté the sliced mushrooms over medium-high heat until golden brown (about 5-7 minutes). Season with salt and pepper.

    Cook the Steak

    Season the ribeye steaks with salt and pepper. In the same skillet, add the remaining tablespoon of olive oil and butter. Cook the steaks for 4-5 minutes on each side for medium-rare, or until desired doneness.

    Combine and Serve

    Once the steaks are cooked, remove them from the skillet and let them rest for a few minutes. Stir the caramelized onions, sautéed mushrooms, and roasted garlic (squeezed from the skin) into the skillet. Add the demi-glace and heat through. Serve the steak topped with the mushroom and onion mixture.
