    Prepare the Steak

    Season the beef rib generously with salt and crushed black peppercorns on all sides.

    Chargrill the Steak

    Heat olive oil in a grill pan over medium-high heat. Add the seasoned steak and cook for about 6-8 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

    Make the Sauce

    In the same pan, add brandy and carefully ignite to flambé (optional). Allow flames to subside, then stir in heavy cream. Simmer for 3-5 minutes until the sauce thickens slightly. Season to taste with additional salt and crushed peppercorns if desired.

    Serve

    Slice the steak against the grain and serve topped with the peppercorn brandy cream sauce alongside mashed potatoes.
