Shrimp Scampi Directions

Cook the Linguini
In a large pot of boiling salted water, cook the herbed linguini according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the vegetable of choice and sauté until tender, about 5-7 minutes. Remove and set aside.

Prepare the Shrimp
In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Add the minced garlic and sauté for 30 seconds until fragrant.

Cook the Shrimp
Add the black tiger shrimp to the skillet, sprinkle with salt and black pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque.

Add Capers and Lemon Juice
Stir in the capers and lemon juice, and continue to cook for another minute.

Make the Lemon Beurre Blanc
Reduce heat to low, add the butter a few pieces at a time, whisking continuously until the sauce is emulsified and creamy. Adjust seasoning with salt and pepper.

Serve the Dish
Plate the herbed linguini, top with the shrimp scampi, drizzle with lemon beurre blanc, and serve alongside the sautéed vegetables.
