    Prepare the Wonton Chips

    Heat vegetable oil in a deep pan over medium heat. Once hot, carefully add wonton wrappers in batches and fry until golden brown, about 1-2 minutes per side. Remove and drain on paper towels. Sprinkle with salt while still warm.

    Sear the Ahi Tuna

    Season the ahi tuna with salt and pepper. Heat a non-stick skillet over high heat and sear the tuna for about 30 seconds on each side for rare, or to your desired doneness. Remove from heat and let it rest for a minute before slicing thinly.

    Prepare the Garnishes

    While the tuna rests, thinly slice the cucumber, heirloom tomato, and jalapeno.

    Assemble the Dish

    On each fried wonton chip, place a slice of seared tuna. Top with cucumber, heirloom tomato slices, and a drizzle of jalapeno aioli.
