Cooking Instructions

  1. 1

    Prepare the Scallops

Pat the diver scallops dry with paper towels. Season both sides with salt and black pepper.

  2. 2

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  3. 3

    Sear the Scallops

Add the scallops to the pan, ensuring they are not crowded. Sear for 2-3 minutes on one side until a golden crust forms, then flip and cook for an additional 2 minutes. Remove scallops from the pan and set aside.

  4. 4

    Make the Beurre Blanc

In the same pan, reduce the heat to medium and add the butter. Once melted, stir in the lemon juice and red pepper flakes, whisking until emulsified. Season with salt to taste.

  5. 5

    Prepare the Salad

In a bowl, toss the mixed greens and grape tomatoes lightly with olive oil and a pinch of salt.

  6. 6

    Plate the Dish

On a plate, arrange the mixed greens and grape tomatoes, then place the seared scallops on top. Drizzle with the spicy lemon beurre blanc.
