    Prepare Lobster

    Boil the lobster tails in salted water for about 8-10 minutes until cooked through. Remove from water, cool slightly, then remove meat from shells and chop into bite-sized pieces. Set aside.

    Cook Pasta

    In a large pot, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make Cheese Sauce

    In a large saucepan, melt the butter over medium heat. Stir in the flour and whisk constantly for about 2 minutes until it forms a roux. Gradually add the heavy cream while continuing to whisk. Cook until the mixture thickens, about 5 minutes.

    Add Cheese

    Remove the saucepan from heat and stir in the smoked gouda and sharp cheddar cheese until melted and smooth. Season with garlic powder, salt, and black pepper.

    Combine Pasta and Lobster

    Add the cooked macaroni and lobster meat to the cheese sauce and stir until well combined. Drizzle in the truffle oil and mix gently.

    Bake (optional)

    If desired, transfer the mixture to a baking dish, top with breadcrumbs, and bake in a preheated oven at 350°F (175°C) for about 20 minutes until golden and bubbly.
