Lobster Bisque Preparation

Prepare the Lobster
In a pot of boiling salted water, cook the lobster tails for about 8-10 minutes until cooked through. Remove, cool, and extract the meat, then chop it into bite-sized pieces.

Add Tomato Paste and Broth
Stir in the tomato paste and cook for another 2 minutes. Pour in the chicken broth and bring to a simmer.

Blend the Soup
Use an immersion blender to puree the mixture until smooth. If you prefer a chunkier texture, blend partially.

Add Cream and Seasonings
Stir in the heavy cream, sherry wine, thyme, salt, and black pepper to taste. Simmer for another 10 minutes.

Incorporate the Lobster
Add the chopped lobster meat to the bisque and heat through for 5 more minutes.
