    Allow the A5 New York Strip to come to room temperature for about 30-60 minutes before cooking. This ensures even cooking.

    Seasoning

    Generously season both sides of the steak with sea salt and freshly ground black pepper.

    Searing the Steak

    Heat a cast-iron skillet over high heat. Add olive oil and allow it to get hot until shimmering.

    Cooking

    Place the steak in the skillet and sear for about 3-4 minutes on each side for medium-rare (adjust time for desired doneness).

    In the last 2 minutes of cooking, add unsalted butter, garlic cloves (smashed), and rosemary to the skillet. Use a spoon to baste the steak with the melted butter and aromatics.

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing to allow the juices to redistribute.
