Add Garlic and Liquids
Add the minced garlic to the pot and cook for an additional 1-2 minutes. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Allow it to simmer for 5 minutes.

Combine Broth and Seasonings
Add the beef broth, thyme, bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

Prepare Croutons
While the soup is simmering, preheat the oven to 400°F (200°C). Cut the French bread into thick slices and place them on a baking sheet. Toast in the oven until golden brown, about 10 minutes.

Assemble the Soup
Remove the bay leaf from the soup. Ladle the hot soup into bowls, top each bowl with a toasted bread slice and sprinkle with Swiss cheese.

Broil
Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Serve immediately.
