Prepare the Choux Pastry
In a medium saucepan, bring the water, butter, salt, and black pepper to a boil over medium heat. Once boiling, remove from heat and quickly stir in the flour until a dough forms. Return to low heat and cook for 1-2 minutes, stirring constantly until the dough pulls away from the sides of the pan.

Incorporate the Eggs
Transfer the dough to a mixing bowl. Allow it to cool slightly before adding the eggs one at a time, mixing well after each addition until fully incorporated and the mixture is smooth.

Add Cheese and Seasoning
Stir in the grated cheese and nutmeg until evenly distributed throughout the dough.

Pipe the Dough
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Using a piping bag or spoon, pipe small mounds of dough onto the prepared baking sheet, leaving space between each mound.

Bake
Bake in the preheated oven for 20-25 minutes or until the gougères are puffed and golden brown. Remove from the oven and let cool slightly before serving.
