Cook the Pasta
In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute, stirring constantly. Gradually whisk in the heavy cream until smooth. Continue to cook until the sauce thickens.

Add Cheese and Flavorings
Remove the saucepan from heat and stir in the smoked gouda cheese until melted and creamy. Add the truffle oil, salt, pepper, and paprika. Mix well.

Combine Pasta and Sauce
In a large mixing bowl, combine the cooked elbow macaroni, cheese sauce, and diced ham. Mix until the pasta is well coated.

Bake (Optional)
If desired, transfer the mixture to a greased baking dish, sprinkle breadcrumbs on top, and bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden and bubbly.

Serve hot, drizzled with additional truffle oil if desired.
