    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and scrub the fingerling potatoes, then cut them in half lengthwise. In a mixing bowl, toss the potatoes with 1 tablespoon of olive oil, salt, pepper, and half of the garlic, minced. Spread them on a baking sheet.

    Roast the Potatoes

    Roast the potatoes in the preheated oven for about 20-25 minutes or until golden brown and tender, turning them halfway through cooking.

    Prepare the Vegetables

    While the potatoes are roasting, slice the sunburst squash and zucchini into rounds. In a separate bowl, toss the squash and zucchini with the remaining tablespoon of olive oil, rosemary, thyme, and the rest of the minced garlic.

    Cook the Steak

    Heat a cast-iron skillet over medium-high heat. Season the bone-in filet with salt and black pepper. Once the skillet is hot, add the filet and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Sauté the Vegetables

    In the same skillet after removing the filet, add the seasoned squash and zucchini. Sauté for about 5-7 minutes until they are tender but still crisp.

    Serve

    On a plate, arrange the roasted fingerling potatoes, sautéed squash, and zucchini alongside the bone-in filet. Enjoy your meal!
