Prepare the Potatoes
Preheat the oven to 400°F (200°C). Wash and scrub the fingerling potatoes, then cut them in half lengthwise. In a mixing bowl, toss the potatoes with 1 tablespoon of olive oil, salt, pepper, and half of the garlic, minced. Spread them on a baking sheet.

Roast the Potatoes
Roast the potatoes in the preheated oven for about 20-25 minutes or until golden brown and tender, turning them halfway through cooking.

Prepare the Vegetables
While the potatoes are roasting, slice the sunburst squash and zucchini into rounds. In a separate bowl, toss the squash and zucchini with the remaining tablespoon of olive oil, rosemary, thyme, and the rest of the minced garlic.

Sauté the Vegetables
In the same skillet after removing the filet, add the seasoned squash and zucchini. Sauté for about 5-7 minutes until they are tender but still crisp.

Serve
On a plate, arrange the roasted fingerling potatoes, sautéed squash, and zucchini alongside the bone-in filet. Enjoy your meal!
