Preparation Steps

    Prepare the Cauliflower Puree

    Steam the cauliflower florets until tender, about 10 minutes. Transfer to a blender and blend until smooth. Add salt and pepper to taste. Set aside.

    Prepare the Tofu

    Press the tofu to remove excess moisture and cut into cubes. Marinate the tofu in a mixture of soy sauce, mirin, salt, and pepper for at least 30 minutes.

    Smoke the Tofu

    Using a stovetop smoker or a smoking gun, smoke the marinated tofu for about 15-20 minutes until infused with smoke flavor. Alternatively, you can grill the tofu for a smoky effect.

    Fry the Tofu

    Coat the smoked tofu cubes in cornstarch and deep fry in hot vegetable oil until golden and crispy. Remove and drain on paper towels.

    Sauté the Maitake Mushrooms

    In a skillet, heat a bit of vegetable oil over medium heat. Add maitake mushrooms and sauté until they are golden and tender, about 5-7 minutes. Season with salt and pepper.

    Prepare Spring Vegetables

    Julienne the carrots and chop the spring onions. Blanch the spring onions and carrots in boiling water for 2-3 minutes, then cool them in ice water.

    Plate the Dish

    On a serving plate, spread a layer of cauliflower puree. Arrange the crispy tofu on top, add sautéed maitake mushrooms, and garnish with blanched spring vegetables.
