Prepare the Mixture
In a large bowl, combine flaked smoked steelhead trout, mashed potatoes, egg, chopped dill, salt, and black pepper. Mix until well combined.

Form the Croquettes
Using your hands, form the mixture into small patties or croquettes, about the size of a golf ball. Roll each croquette in flour, then dip in beaten egg, and finally coat with breadcrumbs.

Fry the Croquettes
In a deep pan, heat vegetable oil over medium heat. Fry the croquettes in batches until golden brown and crisp, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the croquettes warm, topped with a dollop of creme fraiche, a spoonful of trout roe, and garnished with chopped pickled leeks and fresh dill.
