Prepare the Potato Galette
Peel and thinly slice the potatoes. Rinse them in cold water and pat dry. Preheat a non-stick skillet over medium heat and add olive oil.

Cook the Galette
Layer the potato slices in the skillet, slightly overlapping them to form a circle. Season with salt and pepper. Cook for about 5-7 minutes until golden brown, then flip and cook the other side until crisp. Remove from heat and let cool.

Prepare the Beef Tartare
Finely chop the prime beef tenderloin and place it in a mixing bowl. Add the egg yolk, chopped chives, capers, truffle oil, salt, and black pepper. Mix gently until combined.

Prepare the Truffle Aioli
In a small bowl, mix the mayonnaise with a bit of truffle oil, adjusting to taste. Set aside.

Assemble the Dish
Place the crispy potato galette on a plate. Spoon the beef tartare mixture on top of the galette. Drizzle with truffle aioli and garnish with shaved parmesan.
