Prepare the Mussels
Rinse the PEI mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

Roast the Tomatoes
Preheat your oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes with olive oil, oregano, salt, and pepper. Roast for 15-20 minutes until the tomatoes are blistered.

Cook the Sausage
In a large skillet over medium heat, add the 'nduja sausage and cook until it's browned and has released its oils, about 5-7 minutes. Stir in the Calabrian chile.

Combine Ingredients
Add the rinsed mussels to the skillet with the sausage. Pour in a splash of water or white wine, cover, and cook for 5-7 minutes until the mussels open.

Add Roasted Tomatoes
Once the mussels are open, gently fold in the roasted cherry tomatoes. Remove from heat.

Top with Breadcrumbs and Cheese
In a small bowl, mix the breadcrumbs and grated Parmesan cheese. Sprinkle this mixture over the mussels and place under the broiler for 2-3 minutes until golden and crispy.

Remove from the oven and serve immediately, garnished with additional oregano if desired.
